Tasting Notes

Elegant, pale golden colour with greenish glimmers. The delicate nose offers mineral, honeyed notes combined with citrus and white stone fruits. The palate is powerful, dense and fleshy with a lively acidity. Mineral and saline notes linger on the finish.

Production Notes

Hand harvested in order to preserve the quality of the fruit. The grapes are sorted manually on a vibrating sorting table in order to retain only the most healthy fruit. The grapes are drained naturally before being pressed using a pneumatic press in order to gently extract the juices and conserve as much aroma as possible. Static cold settling of the musts for 12 to 24 hours in stainless steel vats in order to obtain a bright, clear juice. Alcoholic fermentation followed by malolactic fermentation, both natural, in stainless steel vats.15 to 18 months in stainless steel vats with, if necessary, some time spent in French oak barrels in order to preserve freshness and minerality whilst bringing complexity and richness to the wine. The wine is racked twice before being bottled in the end of Autumn.

Wine Advocate 92+pts (2016) - The 2016 Chablis Grand Cru Les Clos is the most reserved wine in the range, unfurling slowly with aromas of citrus zest, spring flowers and iodine that I'd expect to show more generosity with a few years' bottle age, while retaining its classic outlines. On the palate, it's medium to full-bodied, deep and foursquare, with a concentrated, tight-knit profile and a tense, stony finish.

Domaine Billaud-Simon in Chablis is comprised of about 42 acres, encompassing four Grands Crus vineyards, including one acre in Les Clos; one acre in Les Preuses; 1.75 acres in Vaudesir and .44 acre in Les Blanchots. The Domaine also owns four Premiers Crus vineyards, including Montee de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons. In addition to its crus wines, Domaine Billaud-Simon makes a Chablis Villages 'Tete d'Or' with grapes harvested exclusively from the estate. In 1815, at the end of the Napoleonic wars, Charles Louis Noel Billaud returned home to Chablis and founded Domaine Billaud-Simon. There, thanks to his family holdings, he planted the first vines. Then, a little more than a century later in the 1930s, the Domaine vineyards were enlarged with the marriage of his descendant Jean Billaud to Renee Simon. Located close to the Serein River, Jean Billaud's son, Bernard, took over the estate until its acquisition by Domaine Faiveley in July 2014. Since then, Domaine Billaud-Simon is managed separately from Domaine Faiveley: It has its own vineyard, winemaking facilities and remains dedicated to uphold the same style of the wines while continually striving to improve their quality. Along with technical improvements in the modern winery, manual grape picking is increasingly being practiced for their Grands Crus and selected Premiers Crus. The majority of the domaine wines see no oak at all, apart from the Premier Cru Mont de Milieu which is 40% vinified in oak and the Grand Cru Les Blanchots, which is 100% vinified in oak. The aim is always to produce a crisp, mineral Chablis with great elegance, purity and balance. They are fantastic when young but also have huge potential for ageing: the Grand Crus typically improve for at least a decade as their high acidity is covered by richness of fruit. The Chablis wines of Domaine Billaud-Simon exhibit elegance, balance and pure Chardonnay fruit. Delicious when young, they evolve beautifully with some ageing.
